This Valentines Day treat yourself and your loved ones to something super special and incredibly delectable. Your taste buds will looove this one. The tartness of the Strawberry sauce works amazingly well with the gorgeous strawberry and almond slice. Preheat oven to 170°C. Line a 12 x 9 inch rectangle baking pan with baking paper. Set aside.
Combine dry ingredients in a large bowl: almond meal, oat flour, coconut sugar, baking soda and salt.
Blend frozen strawberries to make a puree. In a medium bowl, combine strawberry puree, coconut oil and apple cider vinegar.
Add wet ingredients into the dry ingredients and stir together until just combined with no lumps.
Pour into baking pan and spread evenly. Bake for 25 minutes or until the top turns slightly golden.
Once cooked, leave in the pan to cool completely.
Use a large heart shaped cookie cutter to cut out 3 pieces of heart shaped strawberry slices and set aside for layering.
Blend frozen strawberries to make a puree.
Place cacao butter in a saucepan over low heat to melt. Be careful not to overheat.
Remove the cacao butter from heat as soon as it has melted. Then combine almond butter, strawberry puree and maple syrup.
Transfer the mixture into a bowl and place in the fridge for 20 – 30 minutes until the frosting is set and ready to use.
Layer each strawberry slice with strawberry frosting, and continue until you have 3 layers of slice and frosting. (Optional) Spread a layer of raspberry jam to top it all off. And finally, just enjoy it with your favorite glass of champagne. Happy Valentines Day !!
