Immune boosting recipe no.2: Moringa oat slice. Moringa is known as the miracle tree in many parts of southern Asia due to its nutrient dense properties and benefits. It is rich in ginseng and has antioxidant, anti-inflammatory, anti-apoptotic and immune-stimulant properties. With so much of goodness, I just had to use it to supercharge this oat slice. You can find moringa powder at most health food stores.

INGREDIENTS
For moringa oat slice:
 2 cups Medjool dates - loosely packed(soaked in hot water for 20 minutes)
 ¼ cup Coconut oil
 ¼ tbsp Maple syrup
 ½ cup Pepita seeds
 1 ½ cups Rolled oats
 1 tsp Moringa powder(plus extra for topping)
METHOD
Moringa oat slice:

Preheat the oven to 170°C.

Spread rolled oats evenly onto a baking tray and bake for 15 minutes.

Spread pepita seeds evenly onto another baking tray and bake for 10 minutes.

In a food processor, blitz the drained dates to form date paste.

Gently heat coconut oil and maple syrup in a saucepan over low heat, once it is warm to touch, add to the date paste in food processor and blitz again. Transfer date mix into a medium bowl and set aside.

Remove oats and pepita from the oven and add to the date paste along with moringa powder. Stir to combine.

Line a 20cm x 20cm square pan, and spread the oat slice mix and press down to flatten as evenly as possible.

Sprinkle extra moringa powder on top and chill in the fridge for 1-2 hours. Slice and enjoy!
