Immune boosting recipe no.4: Yogurt berry Semifreddo. This Strawberry and Yogurt semifreddo is another simple and easy recipe to make in this series of 5 easy, delicious and nutritional recipes containing immune boosting ingredients. To have a good immune system you need to look after your gut health which means taking pro-biotics (the coconut yoghurt). But if you have pre-biotics (the strawberries) together with pro-biotics, then that boosts the effects of the pro-biotics. So I've brought them together in a pairing that your tastebuds as well as your gut will absolutely love!

INGREDIENTS
For yogurt berry semifreddo:
 1 cup Strawberries(fresh or frozen)
 2 tbsp Coconut sugar
 2 tbsp Water
 250 g Coconut natural yogurt(I used Nakula brand)
 2 tbsp Maple syrup
METHOD
Yogurt berry semifreddo:

In a small saucepan, add strawberry, water and coconut sugar. Bring to a gentle simmer for 2-4 minutes until the strawberries have softened.

Using the back of a spoon, squash the strawberries to make a strawberry sauce. Set aside to cool completely.

Combine maple syrup and coconut yogurt and set aside.

Place 2 tablespoons of strawberry sauce into each silicone mould. I used a 6 cavity silicon dome shaped mould (You can use any mould or even a muffin tray lined with cling wrap).

Evenly distribute yogurt into each mould containing strawberry sauce and flatten the top.

Freeze for 4-6 hours or overnight. Allow it to sit at room temperature for 20 minutes before serving.
