On a cold and wet day there are few things as satisfying as a delicious warm crumble. In this one the heroes are plums. This flavour-packed plum crumble square is a vegan adaptation without any refined sugars - so maximum deliciousness and zero guilt afterwards. Enjoy it on its own or paired with your favourite dairy-free ice cream. The pecan, walnut and oat crumble topping is just the best. Feel free to make double the amount and store for later… sprinkle over a tropical fruit salad or throw into a smoothie for some extra crunch. It stores well in an air tight container for at least a week.

For crumble base:
 150 g Rolled oats
 150 g Oat flour
 50 g Coconut sugar
 1 tsp Baking powder
 ½ tsp Ground nutmeg
 ½ tsp Ground ginger powder
 ¼ tsp Himalayan pink salt
  cup Coconut oil (melted)
 ¼ cup Almond milk
For plum jam filling:
 4 Plums
 6 Medjool dates
 2 tbsp Chia seeds
For crumble topping:
 50 g Pecans
 50 g Walnuts
 2 tbsp Rolled oats
 1 tbsp Coconut sugar
 Ground ginger
 1 tbsp Coconut oil
Crumble base:

Preheat the oven to 180°C. Line a 20x20cm square baking pan with baking paper. Set aside.

Combine oats, flour, sugar, baking powder, spices, salt and coconut oil in a large bowl.

Add milk and incorporate to form a dough.

Transfer mixture to the baking pan and flatten dough into an even layer.

Plum jam filling:

Roughly chop plums and dates, then add all ingredients into a saucepan over medium heat.

Stir occasionally while pressing down plums using the back of a spoon for 5 – 7 minutes.

Once plums have softened completely, allow to cool. Spread jam over crumble base.

Crumble topping:

Place pecan and walnuts in a food processor and pulse until crumbed.

Add remaining ingredients and gently combine with a spoon.

Spread the crumble mixture evenly over the plum jam and base.

To Finish:

Bake for 30 minutes, cut into squares and enjoy either warm with your dairy-free favourite ice cream or on its own.
