I love anything passionfruit and this one especially takes me back to my university days when I worked at Cookie Man in Penrith. We used to bake Passionfruit hearts and they were my absolute favourite especially eaten hot from the oven. I may or may not have occasionally helped myself to some product that was supposed to be sold to customers. This recipe is a tribute to those carefree days. Enjoy making these as they will smell incredible while baking ... and that vegan passionfruit cream – OMG!!!

Preheat oven to 165°C. Place flours, sugar and nut butter in a food processor and pulse. Then add passion fruit pulp, coconut oil and almond milk, process until just combined into a cookie dough.
Transfer cookie dough to a flat surface lined with plastic wrap to avoid sticking, place another plastic wrap on top of the cookie dough. Roll the cookie dough to 5mm thickness. Using a heart shaped cookie cutter, cut out the passion fruit hearts.
Place on baking tray lined with baking paper. Bake for 9 minutes. Allow the cookies to cool.
Place pulp of passion fruit, syrup and nut butter in a food processor and pulse until creamy.
Spread a teaspoon of cream onto half the biscuits and sandwich with the remaining biscuits.
