Halloween special part 2 of 3: Look what we found in the spiders nest?? Blind Dates spider cookies ...they probably look more comical than scary but these cookies are so buttery and crumbly topped with our favourite chocolate Blind Dates.

INGREDIENTS
For Blind Dates spider cookies (makes 6)
 100 g Cashew nut butter
 100 g Peanut butter
 50 g Almond meal
 50 g Coconut flour
 50 g Coconut sugar
 3 Blind Dates - any flavour
 50 g Dark chocolated(melted)
 Puffed rice
METHOD
Blind Dates spider cookies:

Place cashew nut butter, peanut butter, almond meal, coconut flour and coconut sugar into a food processor and pulse for 1-2 minutes until fully combined and forms a dough.

Roll out large cookie shapes and place onto your lined cookie sheet. Use your thumb and form an indent in the center of each cookie to place the Blind Dates in later.

Bake at 175 degrees celsius for 15 minutes. Remove from the oven and allow to rest and cool completely before handling.

While you are waiting for the cookies to cool, cut the Blind Dates in half and set aside.

Melt your chocolate and pour it into a pipping bag.

When the cookies are cooled, place a halved Blind Date in the center of the cookie, and pip the chocolate lines around the Blind Date to form 8 legs.

And finally, stick a puffed rice using chocolate onto the Blind Date to form the eyes.
