Ginger Cookies

This is the first in a series of immune boosting recipes: Ginger Cookies. They are an all-time classic and the ginger in them helps your immune system. I have replicated it here using gluten-free, vegan and refined sugar-free ingredients! As an added bonus, this is a super easy recipe to make with kids so get them involved.

For ginger cookies (makes 15):
 1 ½ cups Almond meal
 ¼ cup Rice flour
 1 tsp Baking soda
 Pinch of himalayan pink salt
 1 tsp Ground ginger powder
 1 tsp Ground cinnamon powder
 ½ tsp Ground nutmeg powder
 ¼ tsp Ground clove powder
 1 tsp Vanilla powder
 1 tsp Freshly grated ginger
 ¼ cup Coconut sugar
 ¼ cup Maple syrup
 ¼ cup Coconut oil(softened, not melted)
Ginger cookies:

Preheat the oven to 175°C.

Combine all dry ingredients, flours, baking soda, spices, salt and freshly grated ginger into a medium bowl.

Add sugar, maple syrup and coconut oil use a wooden spoon to stir and form a dough.

Portion the dough into 15 balls with a small size cookie scoop, or use your hands to make 1" dough balls. Flatten with the back of a spoon to form a cookie shape.

Bake for 12 minutes. Remove from the oven and let the cookies sit on the baking sheet for 10 minutes. Transfer the cookies to a wire rack to cool completely.
