Chocolate salami rolls made with smooth dark chocolate and filled with nuts, cookis and coconut

For chocolate "salami" (makes 2 rolls)
 300 g Plain dark chocolate
 60 g Coconut oil
 3 tbsp Maple syrup
 100 g Gaia Tree Ginger Cookies
 50 g Pecan nuts
 30 g Shredded dried coconut
 Extra cacao powder for dusting (optional)
Chocolate "Salami" Rolls:

Roughly chop and melt the dark chocolate in the microwave or bain marie.

Add the shredded coconut to the melted chocolate. Roughly chop up Gaia Tree Ginger Cookies and pecan nuts and add to the chocolate and stir through.

Add the wet ingredients to the chocolate mix: coconut oil and maple syrup and stir until the chocolate starts to thicken.

Equally divide the chocolate mix onto two sheets of baking or parchment paper.

Use the back of a spoon and shape the chocolate into rolls.

Firmly roll up the baking or parchment paper and tie the ends like a candy wrap.

Chill in the refridgerator for 20-30 minutes until firm.

Remove the wrapper and dust with extra cacao powder.

Cutout the chocolate rolls into discs and enjoy!
