INGREDIENTS
For Candied Pecans:
 ½ cup Pecan nuts (raw)
 1 tbsp Maple syrup
 ½ tbsp Coconut oil
 1 pinch Himalayan pink salt
For Maple Pecan Cookies:
 2 cups Pecan nuts (230g - raw)
 1 cup Oat flour
 ¼ cup Coconut sugar
 ½ tsp Baking soda
 ¼ tsp Himalayan pink salt
 ½ tsp Ground cinnamon
 ¼ cup Maple syrup
 2 tbsp Coconut oil
For creamy maple glaze:
 40 g Cashew butter
 1 tbsp Maple syrup
 1 tbsp Hot water
METHOD
Candied Pecans:

Place the coconut oil in a medium saucepan over low heat. Then add pecans.

Keep a close eye on it as nuts tend to burn very quickly, stir occasionally for about a minute until the nuts start to toast.

Then add maple syrup and salt, combine fully and allow the maple to heat through for 1-2 minutes.

Once the maple starts to bubble, slowly and carefully stir the nuts and syrup together until the syrup starts to thicken and coat the nuts.

Remove the candied nuts from the pan and set aside to cool.

Preheat the oven to 170°C.

Place the raw pecans in a food processor and blitz until it forms pecan flour.

Then add all the remaining ingredients, oat flour, coconut sugar, baking soda, salt, cinnamon, maple syrup and coconut oil and blitz again to form the cookie dough.

Roughly chop the cooled candied pecans and stir into the cookie dough.

The cookie dough is going to be quite sticky so use an ice cream scoop to spoon the batter into your cookie sheet, then flatter the cookie using the back of a spoon.

Bake for 20 minutes. Remove from the oven and let the cookies sit in the baking tray for 5 minutes. Transfer to a wire rack to cool completely.

Creamy maple glaze:

Combine cashew butter and hot water to form a paste, then add maple syrup and stir until it forms a lucsious and glossy glaze.

Transfer into a small pipping bag and drizzle over cooled cookies. (Decorate with eyeball candies if using)
